As we prepare to launch, Orion seeks an experienced and passionate Restaurant Manager to lead the front-of-house operations, ensuring seamless service, team excellence, and an exceptional guest journey reflective of Chef Webb’s award-winning vision.

Role Overview

The Restaurant Manager will be the driving force behind Orion’s service excellence — leading, training, and inspiring the front-of-house team to deliver a world-class guest experience. You will work in close partnership with Chef Alex Webb and the culinary team to maintain the restaurant’s fine-dining standards, operational efficiency, and brand reputation.

This role requires strong leadership, refined hospitality expertise, and a deep understanding of luxury guest service.


Key Responsibilities

1. Leadership & Team Management

  • Recruit, train, and supervise all front-of-house staff including hosts, servers, sommeliers, and bartenders.
  • Lead daily briefings to communicate menu changes, service standards, and guest preferences.
  • Foster a culture of professionalism, passion, and teamwork.
  • Conduct performance evaluations and provide coaching to improve team efficiency.

2. Guest Experience & Service Excellence

  • Ensure every guest receives a memorable, personalized, and seamless dining experience from arrival to departure.
  • Anticipate guest needs, resolve complaints professionally, and maintain a positive atmosphere in the dining room.
  • Uphold the restaurant’s fine-dining etiquette and service sequence at all times.
  • Engage with guests, promote the brand, and enhance return visits through genuine hospitality.

3. Operational Oversight

  • Manage daily restaurant operations including reservations, table allocations, and service flow.
  • Work closely with the culinary and beverage teams to ensure coordination between kitchen and service.
  • Oversee setup, cleanliness, and ambiance of dining areas according to Orion’s design standards.
  • Monitor service timing, table turnover, and staff deployment for maximum efficiency.

4. Financial Management

  • Assist with budgeting, forecasting, and revenue reporting.
  • Manage cash handling, POS operations, and daily reconciliation.
  • Monitor inventory, cost of sales, and waste reduction.
  • Upsell wine pairings and tasting menu experiences to optimize average spend per guest.

5. Compliance & Standards

  • Ensure all UK hospitality regulations, including Health & Safety (HSE), Food Standards Agency (FSA), and Alcohol Licensing laws, are strictly followed.
  • Maintain meticulous records for hygiene, fire safety, and staff training compliance.
  • Guarantee a safe working environment for both guests and staff.

6. Collaboration & Brand Development

  • Work directly with Chef Alex Webb and the marketing team to represent the Orion brand in media, events, and promotions.
  • Participate in menu tastings and provide guest feedback to enhance culinary creativity.
  • Support PR events, pop-up dinners, and brand partnerships to expand Orion’s visibility within the UK fine-dining scene.

Requirements – Restaurant Manager (Fine Dining UK Standards)

Essential Qualifications & Experience

  • Minimum 5+ years of experience in a managerial or senior supervisory role within fine-dining or Michelin-level establishments.
  • Strong leadership and interpersonal skills with the ability to inspire and motivate a diverse team.
  • Excellent knowledge of wine service, food pairing, and luxury hospitality operations.
  • Proven record in achieving high guest satisfaction scores and revenue targets.
  • Familiarity with reservation systems (SevenRooms, OpenTable, ResDiary) and POS technology.
  • Professional appearance, articulate communication, and exceptional customer service ethics.
  • Fluent in English (additional languages a plus).

Desirable Attributes

  • WSET Level 2 or higher certification in wine & spirits.
  • Experience in restaurant openings or pre-launch operations.
  • Understanding of modern British cuisine and fine-dining guest expectations.
  • Innovative mindset with attention to detail in guest relations and service flow.
  • A natural host with charisma, empathy, and diplomacy.
