Sous Chef Responsibilities (Detailed UK Hospitality Standards)
As a Sous Chef at Orion by Alex Webb, you will play a pivotal role in ensuring the smooth operation of the kitchen while maintaining the restaurant’s uncompromising standards of excellence. Your role combines leadership, creativity, technical expertise, and consistency.
Key Responsibilities:
- Kitchen Operations Management
- Supervise and coordinate daily kitchen operations, ensuring timely and high-quality food preparation and presentation.
- Maintain kitchen efficiency during service while upholding health, safety, and hygiene standards as per UK Food Standards Agency (FSA) regulations.
- Menu Development & Creativity
- Collaborate directly with Chef Alex Webb in developing seasonal tasting menus and innovative modern British dishes.
- Contribute ideas for plating, ingredients, and culinary techniques in alignment with the restaurant’s fine-dining concept.
- Team Leadership & Training
- Support and mentor junior chefs, commis, and kitchen porters to maintain consistent quality and kitchen discipline.
- Lead by example in promoting teamwork, communication, and professionalism.
- Quality Control & Consistency
- Ensure every dish leaving the kitchen meets Orion’s visual and flavor standards.
- Conduct daily tasting and quality checks before service.
- Inventory, Ordering & Cost Control
- Assist the Head Chef in inventory management, supplier relations, and cost-effective ingredient sourcing.
- Monitor stock rotation, waste reduction, and sustainability initiatives.
- Compliance & Safety
- Ensure full compliance with UK Health & Safety Executive (HSE) and Food Hygiene (Level 3) standards.
- Oversee correct food storage, allergen control, and cleaning schedules in line with HACCP guidelines.
- Service Excellence & Guest Experience
- Work closely with front-of-house teams to deliver seamless dining experiences.
- Respond to guest feedback and maintain the restaurant’s reputation for excellence.
Sous Chef Requirements – UK Fine Dining Standards
Essential Requirements:
- Minimum 3–5 years of professional experience in fine dining or Michelin-level kitchens.
- Proven experience as a Sous Chef, Junior Sous, or Senior Chef de Partie in a high-end establishment.
- Formal culinary qualification (NVQ Level 2/3 or equivalent diploma).
- Strong understanding of modern British and European cuisine, plating techniques, and flavor pairing.
- Ability to manage kitchen operations under pressure with calm, precise execution.
- Excellent leadership, communication, and mentoring skills.
- Sound knowledge of food safety, allergen control, and HACCP principles.
