As part of its launch, Orion is building a world-class hospitality team to complement its culinary excellence. The restaurant is now seeking a Head Barman (Bar Manager) — an expert mixologist and creative professional passionate about crafting unique beverage experiences that reflect Orion’s fine-dining identity.

Job Overview

The Head Barman at Orion by Alex Webb will lead the bar program, developing an imaginative cocktail menu inspired by British ingredients, seasonality, and the restaurant’s tasting menu philosophy. This role requires a balance of creativity, discipline, and guest engagement — blending the art of mixology with refined service standards.

You will oversee daily bar operations, manage inventory, train staff, and ensure that every drink served embodies Orion’s craftsmanship and attention to detail.


Key Responsibilities

1. Bar Management & Operations

  • Oversee all bar operations, ensuring smooth service and impeccable presentation.
  • Create, prepare, and serve cocktails, mocktails, and signature beverages aligned with Orion’s concept.
  • Collaborate with Chef Alex Webb and the sommelier to design pairings that complement the restaurant’s tasting menus.
  • Manage inventory, order supplies, and monitor cost control to maintain profitability.
  • Maintain the cleanliness, organization, and aesthetics of the bar area.

2. Beverage Development & Innovation

  • Design and update seasonal cocktail menus using fresh, local, and sustainable ingredients.
  • Introduce unique flavour pairings, infusions, and presentation styles that reflect British artistry.
  • Ensure consistency in recipe execution and drink presentation.
  • Stay current with mixology trends, bar technology, and spirit innovations.

3. Guest Interaction & Experience

  • Engage directly with guests, offering recommendations and delivering an elevated beverage experience.
  • Educate guests on the story, ingredients, and craftsmanship behind each drink.
  • Build rapport with regulars and ensure every guest feels valued and recognized.

4. Leadership & Team Development

  • Lead, train, and mentor bar staff, ensuring knowledge of cocktails, wines, and service standards.
  • Conduct tastings and workshops to maintain product knowledge and team creativity.
  • Foster a positive, professional, and collaborative team culture.

5. Compliance & Safety

  • Ensure compliance with all UK licensing laws, Health & Safety Executive (HSE), and Food Standards Agency (FSA) regulations.
  • Manage alcohol service responsibly and monitor guest consumption to maintain safety standards.
  • Maintain accurate records for stock, deliveries, and training logs.

Requirements – Head Barman (Fine Dining UK Standards)

Essential Skills & Qualifications

  • Minimum 3–5 years of experience as a Head Barman, Bar Supervisor, or Mixologist in a fine-dining or luxury hotel environment.
  • Exceptional cocktail-making, mixology, and spirit knowledge.
  • Strong understanding of wine, aperitifs, digestifs, and food pairings.
  • Excellent communication and interpersonal skills for guest engagement.
  • Proven ability to manage bar operations, staff training, and inventory control.
  • High attention to detail, presentation, and product consistency.
  • Fluent in English; additional language skills are an asset.

Desirable Attributes

  • Professional certifications such as WSET Level 2 or 3, Mixology Diploma, or BarSmarts International Certification.
  • Experience developing beverage programs for Michelin-starred or award-winning venues.
  • Creative flair for presentation, storytelling, and sensory pairing.
