We are now seeking a talented and detail-driven Pastry Chef de Partie (CDP) to join our dynamic kitchen brigade. This is a rare opportunity to work under the mentorship of Chef Webb and contribute to an elevated pastry and dessert program designed to surprise and delight every guest.

Job Overview
As a Pastry Chef de Partie at Orion by Alex Webb, you will be responsible for preparing and executing all pastry, bakery, and dessert items to the restaurantβs fine-dining standards. You will work closely with the Head Pastry Chef and Chef Alex Webb in crafting beautifully plated, technically refined desserts that complement Orionβs innovative tasting menus.
This role requires precision, patience, and creativity, with a deep understanding of modern pastry techniques and classical foundations.
Key Responsibilities
1. Pastry Production & Execution
- Prepare and finish high-end plated desserts, petits fours, breads, and pastry components for daily service.
- Maintain consistent quality, taste, and presentation in line with Chef Webbβs fine-dining vision.
- Follow recipes precisely while demonstrating creative input for new desserts and seasonal specials.
2. Creative Development
- Collaborate in developing and testing innovative desserts for tasting menus and special events.
- Experiment with textures, temperatures, and plating to achieve visually striking and flavorful results.
- Stay current with global pastry trends, techniques, and fine-dining presentation styles.
3. Kitchen Operations & Organization
- Manage your pastry section independently, ensuring all mise en place is ready for service.
- Oversee storage, labeling, and rotation of all pastry ingredients and products.
- Ensure efficient use of resources and maintain a clean, organized workstation at all times.
4. Hygiene, Compliance & Safety
- Strictly adhere to UK Food Hygiene and Safety Standards (HACCP, Allergen Control, FSA).
- Maintain daily cleaning schedules, temperature logs, and health & safety checklists.
- Report any food quality or safety concerns to the Head Pastry Chef immediately.
5. Team Collaboration
- Work closely with the wider kitchen team to ensure smooth coordination during service.
- Support and mentor junior pastry chefs or commis when required.
- Uphold Orionβs values of teamwork, precision, and culinary artistry.
Requirements β Pastry Chef de Partie (UK Fine-Dining Standards)
Essential Qualifications & Skills
- Minimum 2β3 years of professional pastry experience in fine dining, luxury hotels, or Michelin-starred kitchens.
- Recognized culinary or pastry qualification (NVQ Level 2/3, City & Guilds, or equivalent).
- Advanced technical skills in classic pastry, baking, chocolate work, sugar art, and plating.
- Strong knowledge of ingredient pairings, seasonal produce, and temperature control.
- Ability to handle pressure while maintaining accuracy and artistry.
- Good communication skills and a positive, professional attitude.
- Comprehensive understanding of UK food safety standards and HACCP compliance.
Desirable Attributes
- Previous experience working in Michelin-starred or award-winning restaurants.
- Creative flair with a strong eye for color, texture, and balance.
- Passion for learning and continuous skill development.
- Familiarity with modern pastry trends such as molecular elements, plant-based desserts, and plated degustation menus.
